Sicilian-Style Salmon with Garlic Mushrooms

- For Sicilian-style Salmon
100g/3½oz salmon fillet, skin removed
½ tsp dried chili flakes
1 tsp ground paprika
1 lime, juice only
olive oil, for drizzling
salt and freshly ground black pepper
- For Mushrooms and Broccoli
100g/3½oz button mushrooms, sliced
100g/3½oz broccoli, chopped
1 tbsp. olive oil
1 garlic clove, finely chopped
2 tbsp. chopped fresh parsley, optional
Directions
- Preheat oven to 180 degrees C. Lightly grease a baking dish with oil.
- Place salmon fillet onto baking tray. Drizzle all over with lime juice and a little olive oil. Sprinkle with chili flakes and paprika. Season with salt and pepper.
- Bake for about 10 minutes, or until cooked through.
- Heat a tablespoon of oil in a frying pan. Add mushrooms and stir-fry for 5 minutes. Add broccoli and stir-fry until cooked to your liking.
- Add garlic and fry for 1 minute, then stir in parsley.
- Serve immediately with salmon!
