Ingredients

  • For Chicken:
  • 1 (1 to 2 1/2-pound) chicken, cut into pieces

  • 3 eggs

  • 1 cup hot red pepper sauce (Texas Pete)

  • 2 cups self-rising flour

  • 1/3 cup water

  • 1 teaspoon pepper

  • House seasoning

  • Oil, for frying, preferably peanut oil

  • For House Seasoning:
  • 1/4 cup black pepper

  • 1/4 cup garlic powder

  • 1 cup salt

Directions

  • Mix all ingredients for House Seasoning in a bowl. Mix to combine and set aside.
  • Beat eggs with water in a medium size bowl. Add hot sauce, enough amount, stir until egg mixture is bright orange.
  • Combine flour and pepper in another bowl. Season chicken with house seasoning. Dip chicken into egg mixture, and dredge into flour mixture. Press to coat.
  • Heat oil in a deep pot to 350 degrees F. Add chicken, in batches, and fry until brown and crisp, for 8-10 minutes (may be longer, depending chicken meat, white or dark).
  • Remove from oil and place in a plate lined with paper towel or wire rack to drain.
  • Garnish with fresh parsley, if desired. Serve immediately!

Notes

  • You can store in an airtight container for up to 6 months.
