- For Chicken:
1 (1 to 2 1/2-pound) chicken, cut into pieces
3 eggs
1 cup hot red pepper sauce (Texas Pete)
2 cups self-rising flour
1/3 cup water
1 teaspoon pepper
House seasoning
Oil, for frying, preferably peanut oil
- For House Seasoning:
1/4 cup black pepper
1/4 cup garlic powder
1 cup salt
Directions
- Mix all ingredients for House Seasoning in a bowl. Mix to combine and set aside.
- Beat eggs with water in a medium size bowl. Add hot sauce, enough amount, stir until egg mixture is bright orange.
- Combine flour and pepper in another bowl. Season chicken with house seasoning. Dip chicken into egg mixture, and dredge into flour mixture. Press to coat.
- Heat oil in a deep pot to 350 degrees F. Add chicken, in batches, and fry until brown and crisp, for 8-10 minutes (may be longer, depending chicken meat, white or dark).
- Remove from oil and place in a plate lined with paper towel or wire rack to drain.
- Garnish with fresh parsley, if desired. Serve immediately!
Notes
- You can store in an airtight container for up to 6 months.
