Spring Roll Bowl
I love a complete meal served in a bowl. The reason is simple. It’s easy to assemble and quick to clean after cooking. All you need to do is to divide prepared foods among serving bowls. Then, ready to serve. This Spring Roll Bowl then comes to me. Fresh and loaded with flavors of any fresh vegetable salad, it gets my family hooked. My husband, who are adopting a clean eating diet, has craving for it. It’s delicious but keeps him stick to his diet.
This spring roll bowl is filled with cooked rice noodle, chopped peanut, avocado, carrot, cucumber, bell pepper, serrano pepper, basil, mint, cilantro. They are all tossed with a flavorful sweet garlic lime sauce of rice vinegar, fish sauce, lime juice, vegetable oil, garlic, and brown sugar. To make it more delicious (and protein-rich), you can add in grilled shrimp, baked chicken, and fried tofu. It’s worth trying!

Ingredients
- For sweet garlic lime sauce
2 tablespoons rice vinegar
1/4 cup agave or brown sugar
3 cloves garlic
1/4 cup fish sauce
1/3 cup lime juice
1/3 cup vegetable oil
- For bowls
Rice noodle
Basil, mint, cilantro
Serrano peppers
Chopped peanuts
Avocado
Veggies (carrots, bell peppers, and cucumbers,..)
Shrimp, tofu, chicken (optional)
Directions
- Add all ingredients for sauce into a blender or food processor. Blend until smooth.
- To cook rice noodle, soak in cold water for about 30 minutes until soften. Transfer to a pot of boiling water for just a minute or two. Remove and drain.
- Mince herbs, slice serranos, and peel or julienne cut vegetables.
- To assemble, divide noodles among serving bowls. Add vegetables and sauce. Toss well to combine.
- Serve !
