Ingredients

  • 4 chicken breasts

  • 4 ounces cream cheese, softened

  • ¼ cup grated Parmesan

  • 2 tbsp. mayonnaise

  • 1 ½ cups chopped fresh spinach

  • 1 tablespoon olive oil or avocado oil

  • 1 tsp paprika

  • ¼ tsp garlic powder

  • ¼ tsp onion powder

  • 1 tsp garlic, minced

  • ½ tsp red pepper flakes

  • 1 tsp salt, divided

Directions

  • Preheat oven to 375 degrees F. Prepare a 9×13 baking dish.
  • Lay chicken breasts on a cutting board and drizzle with oil.
  • Combine paprika, 1/2 teaspoon salt, garlic powder, and onion powder in a small bowl. Sprinkle evenly over both sides of chicken.
  • Cut a pocket into side of each chicken breast; using a sharp knife. Set aside.
  • Gather cream cheese, Parmesan, mayonnaise, spinach, garlic, red pepper and remaining ½ teaspoon of salt in a small mixing bowl. Stir well to combine.
  • Scoop spinach mixture into each chicken breast evenly.
  • Place chicken breasts onto baking dish. Bake, uncovered, for 25 minutes or until chicken is cooked through.
  • Once done, remove from oven and let cool for 4 minutes. Serve!
