Crispy Parmesan Zucchini

This crispy parmesan zucchini is one of my guilt’s pleasures! Tasty, crispy and flavorful, these zucchini fries surely tantalize your taste buds. Let’s take my family as an example. When I first treated them with these fries, they all fell for them. My kids who are not fond of zucchini, eat up all fries in their bowl. They often ask to give them some more and feel happy to have these as healthy snacks. My husband? He also gives these fries an absolute yes!

Zucchini is cut in half, lengthwise, then stuffed with a crazy good mix of breadcrumbs, parmesan cheese, parsley and garlic, melted butter, salt and pepper. Zucchini halves are then baked in the oven until cooked through and crust is golden. Let them rest for a few minutes and they’re ready to serve. It’s incredibly easy to make, right? We do believe that any of you can make a great job with it even when you are not much good at cooking.

Zucchini is cut in half, lengthwise, then stuffed with a crazy good mix of breadcrumbs, parmesan cheese, parsley and garlic, melted butter, salt and pepper. Zucchini halves are then baked in the oven until cooked through and crust is golden.

Ingredients

  • 4 large zucchini, cut in half, lengthwise

  • 1/2 cup fresh grated parmesan cheese

  • 2/3 cup panko breadcrumbs

  • ¼ cup finely, chopped parsley

  • 1/4 cup melted butter

  • 4 cloves garlic, minced

  • Salt and pepper

Directions

  • Preheat oven to 400°F (200°C). Grease a baking tray or sheet.
  • Place zucchini, cut side up, onto baking sheet. Set aside.
  • Add breadcrumbs, parmesan cheese, parsley and garlic to a small bowl. Whisk to combine.
  • Pour in melted butter, season with ¾ teaspoon salt and ⅓ teaspoon pepper (or to taste). Mix until well combined.
  • Scoop cheese mixture into zucchini half. Brush top with a little cooking oil spray.
  • Bake in preheated oven for 20 minutes, until crust is golden and zucchini halves are cooked through.
  • Broil for a further 5 minutes on medium heat to crisp topping.
  • Garnish with parsley, if desired.
  • Serve immediately!
