Ground Turkey Stuffed Peppers

Along with ground beef, beef strips, sausages, shrimps, and wild rice, ground turkey is a preferred ingredients to fill into peppers. And then, Ground Turkey Stuffed Peppers comes to me. Loaded with flavors, these are now my family’s favorite! We have these for every Friday’s dinner. Parents and kids stay together, chat, and enjoy good foods, then life would be much valuable. We treasure every moment we gather.

These stuffed peppers are quite easy to make and quick to serve. Peppers are cut off top, removed seed, and boiled until just tender and drain. They are then stuffed with a mixture of ground turkey, rice, crushed tomatoes, shredded cheese, Italian seasoning, salt and pepper. They are finally baked in the oven until tender and cheese is melted. Let cool a bit and ready to serve. We do believe that any of you can make a great job with it!

Peppers are cut off top, removed seed, and boiled until just tender and drain. They are then stuffed with a mixture of ground turkey, rice, crushed tomatoes, shredded cheese, Italian seasoning, salt and pepper. They are finally baked in the oven until tender and cheese is melted.

Ingredients

  • 6 large bell peppers, any color

  • 1 lb. 93% Lean ground turkey

  • 2 cups wild rice, cooked

  • 1 16 oz. jar crushed tomatoes

  • 1 1/2 cups sharp cheddar cheese, shredded

  • 2 cloves garlic, minced

  • 1 small onion, diced

  • 1 teaspoon Italian seasoning

  • 1 tablespoon olive oil

  • 1 teaspoon salt

  • 1/2 teaspoon pepper

Directions

  • Preheat oven to 350 degrees F. Grease a 10-inch cast iron skillet and set aside.
  • Prepare rice according to package direction and set aside.
  • Cut off tops of peppers, remove seeds, trim bottoms to help them sit flat in skillet and rinse thoroughly.
  • In a large pan with boiling water, cook peppers for 5 minutes. Remove and drain.
  • Heat olive oil in a large skillet over medium-high heat. Add garlic and onion, saute until tender.
  • Add ground turkey and brown until thoroughly cooked.
  • Stir in crushed tomatoes, rice, Italian seasoning, salt, pepper and 1/2 cup of shredded cheese. Cook to well combine.
  • Add 2-3 spoons of mixture into peppers, place onto baking skillet.
  • Bake uncovered for 25 to 30 minutes. Remove, add remaining cheese over top of peppers, and bake for 5 minutes more, until cheese is melted.
  • Remove, let cool for a few minutes and serve!
