Ingredients

  • 5 medium chicken breasts

  • 1 cup ricotta

  • 1/2 cup parmesan

  • 1 cup mozzarella

  • 1 egg

  • 2 cups marinara

  • 1 tablespoon Italian seasoning

  • 1/2 teaspoon salt

  • 1/4 teaspoon pepper

  • fresh basil, to serve

Directions

  • Preheat oven to 400 degrees F.
  • Add ricotta, parmesan, egg, Italian seasoning, salt and pepper to a bowl. Whisk to combine and set aside.
  • Generously season chicken breasts with salt and pepper. Gently pat to adhere. Slice in half to form a “pocket”.
  • Place a spoonful of marinara in each chicken breast. Spread to make an even layer; using back of a spoon.
  • Scoop even amount of lasagna stuffing into each chicken breast. Cover with remaining marinara. Sprinkle with mozzarella over top.
  • Bake in preheated oven for 35 minutes, until chicken is cooked through and no longer pink.
  • Garnish fresh basil. Serve immediately!
