Ingredients

  • 5 large zucchini

  • 1 lb. ground turkey breast, 99% fat-free

  • 1 1/4 cup shredded mozzarella cheese

  • 15 ounce can of black beans, drained/rinsed

  • 1 medium red bell pepper, diced

  • 1 – 2 small jalapeños, de-seeded and diced

  • 1 cup canned corn, drained

  • 1 medium red onion, diced

  • 1/2 teaspoon black pepper

  • 1 teaspoon onion powder

  • 1 teaspoon garlic powder

  • fat-free salsa for dipping optional

Directions

  • Preheat oven to 400 degrees F. Prepare a baking dish and set aside.
  • Cut end off of each zucchini and slice 1/4 of front off, lengthwise.
  • Hollow out insides of zucchini; using a spoon.
  • Brown ground turkey in a skillet. Stir in diced vegetables, black beans, corn, pepper, garlic, and onion powder until combine. Cook on medium heat until warm.
  • Scoop turkey mixture into zucchini boats equally.
  • Place zucchini into a baking dish and cover with foil.
  • Bake in preheated oven for 25 minutes. Remove foil and top each boat with shredded cheese.
  • Bring back to oven and bake for 5 minutes more.
  • Let cool a bit and serve!
