Tomato and Avocado Toast with Balsamic Syrup

Bread slices are lightly toasted, and evenly spread with mashed avocado mixture of avocado flesh, garlic powder, salt and pepper. These are then topped with arugula, followed by tomato slices. The toasts are finished off with drizzles of thicken balsamic syrup on top.

Ingredients

  • 3 pieces of whole wheat bread

  • 1 or 2 avocados

  • 1 or 2 tomatoes

  • 1 1/2 cups baby arugula

  • 1/4 tsp garlic powder

  • 1/2 cup balsamic vinegar

Directions

  • Toast whole wheat bread.
  • Scoop the flesh of avocado in a bowl and mash with a fork until spreadable. Add garlic pepper and season with salt and pepper.
  • Add balsamic vinegar in a pan over high heat. Simmer for about 6 minutes; until it has reduced to about 2 tablespoons and got thickened.
  • Spread avocado evenly onto each slice of bread. Top with about 1/2 cup of arugula, and one or two slices of tomatoes.
  • Drizzle with balsamic syrup. Season with black pepper and serve.
