3 pieces of whole wheat bread
1 or 2 avocados
1 or 2 tomatoes
1 1/2 cups baby arugula
1/4 tsp garlic powder
1/2 cup balsamic vinegar
- Toast whole wheat bread.
- Scoop the flesh of avocado in a bowl and mash with a fork until spreadable. Add garlic pepper and season with salt and pepper.
- Add balsamic vinegar in a pan over high heat. Simmer for about 6 minutes; until it has reduced to about 2 tablespoons and got thickened.
- Spread avocado evenly onto each slice of bread. Top with about 1/2 cup of arugula, and one or two slices of tomatoes.
- Drizzle with balsamic syrup. Season with black pepper and serve.
