Mexican Tortilla Rollups

These are my new favorite! Mexican Tortilla rollups. They are incredibly good. Made with sour cream, cream cheese, shredded cheddar cheese, green chilies, black olives and spices, these seem to melt in my mouth right with the first try. My picky kids who are not much fond of appetizers, also give them an absolute yes. Yummy!

Serving in bite-size and ready on the table in just 20 minutes, these are great for family meals, game day viewing parties and holidays. I sometimes have these as a treat for family after a long week at work and study. If you are invited to a weekend gathering and have no idea for what to bring with, just give these a try, too. They are enough to work up an appetite for meals or even drive the crowd crazy.

Although these look impressive, they’re WAY easier to prepare than you think. Add all filling’s ingredients in large mixing bowl and combine well. Then, spread an even layer of the filling over the tortilla; tightly roll up from one end to another. To serve immediately, cut it into bite-sized slices (1/2-inch). Easy, right? These bite-sized Mexican Tortilla Rollups are an appealing appetizer for any occasion. Roll up, refrigerate, slice and serve with salsa!

Ingredients

  • 8 ounces sour cream

  • 8 ounces cream cheese softened

  • 4.5 ounces green chilies (1 small can) drained and diced

  • 4.5 ounces chopped black olives (1 small can) drained

  • 1 cup shredded cheddar cheese

  • 1/8 teaspoon garlic powder or more to taste

  • 1/4 teaspoon seasoned salt or more to taste

  • 5 10″ flour tortillas

Directions

  • Blend together sour cream and cream cheese with mixer. Stir in chilies, olives, cheese and seasonings.
  • Spread the mixture on equally on each of the floured tortillas and roll them up tightly.
  • Wrap each roll in plastic wrap and refrigerate for overnight or for at least 2 hours.
  • Slice and serve with salsa.
