Cheesy Mustard and Mushroom Toasts

These cheesy mustard and mushroom toasts are healthy and delicious yet easy and quick to make. You can serve it as an appetizer, snack or even a full meal. My family, especially my husband loves it for breakfast and brunch. And I, I prefer bringing them to work for lunch. Just need to preheat in the microwave one minute or two before serving. Then, I have a homemade and nutritious lunch. Perfect!

Ingredients

  • 2 slices thick rustic French bread

  • 4 cups baby bella or cremini mushrooms, sliced

  • 2 tbsp. Maille old style mustard

  • 1 cup shredded Swiss cheese

  • 2 tbsp. butter

  • 3 cloves garlic, minced

  • 1 tsp fresh thyme leaves

  • salt and pepper

Directions

  • Melt some butter in a sauce pan over medium high heat. Add mushrooms and cook for about 5 minutes; stirring occasionally. Add garlic and continue to cook for 15 minutes.
  • Preheat the broiler.
  • Spread mustard evenly on one side of bread slices. Top each with a sprinkle of cheese. Spread with mushrooms and then sprinkle with cheese on top. Broil until cheese is melted and starts brown, about 2 minutes.
  • Remove. Sprinkle with fresh thyme and season with salt and pepper. Serve.
