1 1/2 pounds chicken breasts, cut into 1” chunks
1/2 cup cornstarch
2 eggs, beaten
1/4 cup flour
1 cup pineapple chunks
1 red bell pepper, cut into 1” chunks
1 green bell pepper, cut into 1” chunks
1/2 yellow onion, cut into 1” chunks
1/2 cup apple cider vinegar
1/3 cup ketchup
4 teaspoons reduced sodium soy sauce
1/2 cup sugar
1/4 cup brown sugar
2 cloves garlic, minced
canola oil, for frying
Directions
- To make sauce, combine sugar, brown sugar, apple cider vinegar, ketchup, soy sauce and garlic into a small bowl. Whisk well and set aside.
- Pour enough canola oil into a Dutch oven or frying pan, 1-inch and a half deep. Heat over medium high to high heat.
- Add cornstarch to a large ziplock bag. Add in chicken and shake until well coated.
- Dip chicken into egg, then into flour.
- Carefully drop chicken, in batches, into pan and fry for 2-3 minutes, until cooked through and crispy.
- Transfer to a wire rack or dish lined with paper towel to drain. Repeat with remaining chicken.
- Reserve a tablespoon of oil in pan. Add bell peppers, onion and pineapple and fry for 1-2 minutes, until crisp-tender.
- Stir in sauce and toss coat with veggies. Continue to cook for 30 seconds to help garlic warm through.
- Return chicken to pan and stir until sauce has thickened and bubbling.
- Garnish with sesame seeds or green onions. Serve immediately!
